There are numerous ways to enjoy lamb loin.
- Place meat into a Dutch oven and cover with olive oil, herbs, salt and pepper. Sear sides until brown on the stove-top, and then put into the oven until it’s almost done. Allow the meat to rest for up to 30 minutes and serve.
- Season the lamb loin with salt and pepper. Pan-sear on two sides until browned. Allow to cool and cover with a mixture of panko, mustard and honey on the top of the meat. Place in the oven and roast.
